Technological breakthrough: optimization of methods for harvesting, concentrating, and stabilizing fresh microbial biomass while preserving its organoleptic and nutritional qualities. A scaling up will allow the developed processes to be transferred to industry.
Scientific breakthrough: development of strategies for formulating and using biomass to provide consumers with appealing, healthy, and sustainable products.
Digital breakthrough: development of digital tools to optimize bioprocesses, biomass utilization, and decision-making, including life cycle and sustainability analysis.
